CHICKEN IN PIRI-PIRI

 

Cooking time

2 Hours in the oven

Oven temperature GAS MARK 4-5, 180 deg C, 350 deg F

 

Ingredients

2 lb lean fresh chicken fillets in piri-piri sauce

4 potatoes (jacket)

Preparation time just 15 minutes.

 

Method

 

1 Take lean chicken fillets already diced and prepared in sauce by the butcher and place in a casserole dish. pierce jacket potatoes and place in top of oven.

2 After 1 hour stir casserole.

3 10 minutes before finishing remove potatoes from oven and cut in half, scoop out 80% of the potato

 

and put in a bowl.  Mash the potato with butter. Remove casserole from oven, spoon the diced chicken fillets into the skins of the potatoes, then cover with the remaining mashed potato.

 

Serve the remaining chicken piri-piri onto the plate and pour the sauce over to finish.

 

Best served with garden peas.
