CHICKEN IN PIRI-PIRI
Cooking time 2 Hours in the oven Oven temperature GAS MARK 4-5, 180 deg C, 350 deg F
Ingredients 2 lb lean fresh chicken fillets in piri-piri sauce 4 potatoes (jacket) Preparation time just 15 minutes.
Method
1 Take lean chicken fillets already diced and prepared in sauce by the butcher and place in a casserole dish. pierce jacket potatoes and place in top of oven. 2 After 1 hour stir casserole. 3 10 minutes before finishing remove potatoes from oven and cut in half, scoop out 80% of the potato

and put in a bowl. Mash the potato with butter. Remove casserole from oven, spoon the diced chicken fillets into the skins of the potatoes, then cover with the remaining mashed potato. |

Serve the remaining chicken piri-piri onto the plate and pour the sauce over to finish.
Best served with garden peas. |
